Elvio Cogno's Cascina Nuova is a Barolo DOCG made entirely from Nebbiolo grown in the estate's Piedmont vineyards. The winery uses younger vines to create an approachable expression of Barolo, with a 30-day submerged-cap maceration followed by 24 months in large Slavonian oak casks and further bottle aging.
