Tasting Notes For Aquilini Cabernet Sauvignon 2017

Forged by the earth, wind and fire of Red Mountain, the 2017 Aquilini Cabernet Sauvignon is a wine of exceptional quality and unique character. Blessed with great soil, ideal climate, and refreshing breezes, the winemaker does very little to interfere with the natural fruit.

Designed with the capacity to age, this Cabernet Sauvignon offers impressively big, ripe tannins and a deep core of intense, dark fruit interwoven with iron, bay leaf and crushed rock. The palate is opulent and concentrated, revealing seamless integration of ripe fruit, dried herb and sweet oak spice. The winemaker’s goal is to gently extract character and expression from the vineyards; to capture the best of what the winery's land has to offer. The 2017 vintage delivered the power, concentration, complexity and nobility we expect from Cabernet Sauvignon.

Inky colored, the 2017 Cabernet Sauvignon Red Mountain comes from the two separate vineyards on Red Mountain and spent 31 months in new barrels. Pure crème de cassis, crushed rock, graphite, lead pencil and dark chocolate notes all emerge from the glass, and it has a stacked mid-palate, wonderful purity of fruit, and a serious, mineral-drenched finish. It's more approachable than the Halo release yet is still brutally tannic. I think it will get there, but it's not for the faint of heart nor the impatient. - Jeb Dunnuck

Tasted as a barrel sample, the 2017 Cabernet Sauvignon Red Mountain is immediately impressive and displays a beautiful dark purple color and a good core of fruit with a lovely density and rocky, dusty expression under the fleshy and robust fruit. Blueberry, black cherry and blackberry all waft from the glass with notes of currant and créme de cassis. Full-bodied, the palate is rich and sturdy with a lovely bold expression that balances the oak spices and compact tannins that will settle with time. The finish is bright, bountiful and focused, with a long, mineral expression of crushed rock and black cherry. YUM! - Anthony Mueller
